I tasted this salmon club sandwich a little while ago in a place in the lower Modena area, during a tribute to U2. I was undecided whether to have the vegan burger or this sandwich, but my passion for salmon prevailed. And I must say I did well, this sandwich is delicious, fresh and light, but perfectly satisfying.
The sauce they used in the sandwich added a lot of freshness, but not having understood how it was made, I decided to create a yogurt mayonnaise to which, if you want, you can add some fresh dill or chives.
This sandwich is perfect for a quick lunch or dinner, and when cut even smaller, I used the large square sandwich bread, it’s also perfect as a snack during an aperitif.

Ingredients for the salmon club sandwich
- 14 oz smoked salmon
- 12 slices sandwich bread
- 2 round tomatoes
- 4 leaves lettuce (such as iceberg or butter lettuce)
- 3.5 oz mayonnaise
- 2 tablespoons plain yogurt

Preparation of the salmon club sandwich
Toast the sandwich bread slices on both sides, once ready let them cool completely.
Meanwhile, as the bread cools, wash and slice the tomatoes thinly. Wash and dry the lettuce leaves.
Mix the mayonnaise and the yogurt in a bowl.
Take a slice of bread and place a lettuce leaf, some tomato slices and a tablespoon of yogurt mayonnaise on top.
Place another slice of bread and add another tablespoon of mayonnaise, then place the smoked salmon.
Cover with a new slice of bread and press gently with your hands.
Cut the club sandwich diagonally, insert a wooden skewer and serve immediately.
