Risotto is one of those dishes that can always tell a story: of territory, tradition, but also of creativity and the desire to experiment. When I thought of shrimp risotto with raspberry powder, the idea was to combine sea and red fruits in a surprising embrace, capable of delighting the palate and evoking festive atmospheres. An elegant, refined dish, yet simple in its execution, bringing a touch of color and originality to the table.
But before describing my recipe, I want to explain what made this recipe special: the “Generous Grains” rice from Porta Aperta, a volunteer association based in Modena, which has been providing breakfast, lunch, and dinner every single day of the year for over 45 years to the most vulnerable people, also offering initial hospitality, warm spaces, medical care, and a place where those in need can find relief.
By purchasing this rice – Carnaroli quality, from the artisanal rice mill Carpi Riso, which features recipes designed for the project on the back of the packaging, you contribute to the funding of the project “A Welcoming Canteen”, a path of requalification of the canteen space of Porta Aperta to make the refectory more welcoming and adequate. An opportunity to warm both belly and heart: purchasing these grains is accompanied by other solidarity gifts, such as grape juice and decorative balls for the Christmas tree. All can be ordered directly online on the Porta Aperta site.
And it is precisely from this awareness that my risotto is born: a dish that is not only an exercise in taste and creativity but also a gesture of solidarity. Every grain of rice carries a story of hospitality and care, and cooking it becomes a way to feel part of a larger project. The shrimp, with their delicacy, meet the tangy and lively note of raspberry powder, creating a perfect balance between sweetness and freshness. The result is a risotto that speaks of celebration, sharing, and hope, just like the project that inspired it.
In addition to the beautiful gifts proposed by Porta Aperta, here are some ideas to prepare Christmas gifts.

Preparation of Shrimp Risotto with Raspberry Powder
Chop the onion and set it aside.
Remove the shell and vein from the shrimp.Pour a drizzle of extra virgin olive oil into a saucepan, add the chopped onion and let it stew on low heat. Once it is soft, add the rice and increase the heat. Toast the rice well, then add the dry white wine and let it evaporate.
Start adding a ladle of broth at a time to cook the risotto.
About five minutes before the end of cooking, add the shrimp. They need very short cooking, otherwise, they tend to become tough, but they will still release their flavor into the risotto.
Once cooked, serve the risotto on individual plates, decorating with raspberry powder.
