Zucchini Rolls in the Air Fryer

The zucchini rolls in the air fryer are a rich side dish or a main course that I have been preparing since I bought my trusty air fryer.

I always try to prepare different side dishes with the few vegetables my daughter eats, and zucchini is one of them. The idea came to me while browsing social media a few months ago when I noticed this recipe prepared by a guy who finished the dish in the oven. Ever since I got my air fryer, I try to make the most of it, especially when it’s just me and my daughter at the table. The basket size is perfect for the two of us.

Preparing these zucchini rolls is very simple, requiring very few ingredients, and in no time, the dish is ready to be served.

The zucchini rolls in the air fryer are also great at room temperature.

Ingredients for the zucchini rolls in the air fryer

  • 1 1/4 cups breadcrumbs
  • 3 1/2 oz cooked ham (sliced)
  • 3 1/2 oz emmentaler (sliced)
  • 1 3/4 oz Parmigiano Reggiano DOP (grated)
  • 3 zucchini (medium)
  • as needed extra virgin olive oil
  • as needed salt

  • Air Fryer
  • Air Fryer Paper
  • Mandolin

Preparation of Zucchini Rolls

  • Wash and dry the zucchini, trim them and slice them into strips with the microplane.

    Slice the cheese and cooked ham to a width similar to the zucchini.

    Pour the extra virgin olive oil into a plate and the breadcrumbs mixed with Parmigiano Reggiano into another plate.

  • Dip the zucchini slices first in the oil and then in the breadcrumbs. Place a slice of cheese and a slice of cooked ham on top. Roll up and secure with a wooden toothpick. Repeat this process for all the zucchini slices.

    Place the zucchini rolls inside a paper-lined tray, standing side by side.

  • Preheat your air fryer with the designated program; mine heats for 4 minutes at 392°F.

    Once preheated, insert the tray into the basket and cook at 374°F for 25 minutes.

    Once ready, carefully remove the tray from the air fryer and let the zucchini rest for a few minutes, then serve at the table.
