The apple cake with apricot yogurt is a soft and moist dessert suitable for any time of the day.
Great for breakfast, it can also be the ideal solution as a dessert at the end of a meal, perhaps served with a dollop of cream.
Perfect with tea or coffee.
What can I say… apple desserts are one of the delights that in the autumn period start appearing from home to home, and then accompany us throughout the colder season.
Baking this cake, filled with so many good apples, is truly a great satisfaction… a healthy dessert, of which there are countless versions.
Each person favors one aspect or another, but for me, the real apple cake is the one with the classic, moist, and fragrant taste.
However, I allow myself to add apricot yogurt, which with its delicate touch brings out the taste of the apples even more.
To finish it all, a crunchy and spicy surface thanks to a generous sprinkle of brown sugar and cinnamon.

Ingredients
- 5 apples
- 2 1/2 cups all-purpose flour
- 3/4 cup sugar
- 1/2 cup yogurt (apricot)
- 6 tbsp butter
- 3 eggs (medium)
- 1 packet baking powder
- 1 packet vanillin
- to taste brown sugar
- to taste cinnamon powder
- to taste powdered sugar

Preparation
To prepare the apple cake with apricot yogurt, start by melting the butter over very low heat.
Let it cool.
Then cut 3 medium-sized apples into cubes, cover the container with plastic wrap.
Beat the eggs with the sugar for 4/5 minutes, until we have a fluffy and foamy mixture.
Add the now cold butter and mix.
Then combine the sifted flour with the baking powder and vanilla, mix.
At this point, add the yogurt to the batter.
Apricot yogurt can be replaced with peach or plain sweet yogurt.
Once a homogeneous mixture is obtained, add the apple cubes and stir everything to distribute them well.
Pour into a springform pan with a diameter of 9.5 inches. The pan will have been previously greased with a release agent or with butter and flour.

Decorate the surface of the cake with thin apple wedges inserted in a radial pattern into the batter.
You will need one and a half apples to achieve the same effect as mine.
Sprinkle the surface with brown sugar and cinnamon as desired.
Bake in a preheated oven at 350°F, static function, middle level.
Bake for about 45 minutes, always do the toothpick test before removing from the oven.
Wait a few minutes before removing the cake from the pan.
When cold, sprinkle with powdered sugar.
The apple cake with apricot yogurt is now ready.

In the fridge, well closed in a cake container, for about 3 days.
