Baked Breaded Anchovies

Baked breaded anchovies are a tasty and flavorful fish main dish, easy to make and thanks to baking, they preserve the properties of this wonderful type of bluefish.

As is well known, the consumption of bluefish, especially of small size, is highly recommended when it comes to healthy eating.

These fish indeed contain important nutrients and especially omega-3s, i.e., fatty acids that help combat inflammatory conditions in the body.

If you buy the fish already deboned and butterflied, executing this recipe will be a breeze.

Just accompany them with a fresh salad and lunch or dinner will be served in no time.

A breading with the scent of parsley and garlic coats the anchovies, which a baking will make crispy and flavorful.

An irresistible smell will invade your home as the time to take them out of the oven approaches and, I assure you, they will never be enough, one leads to another like cherries.

Ingredients

  • 10.5 oz anchovies (already cleaned, deboned, and butterflied)
  • 1 cup breadcrumbs
  • 1.75 oz Parmesan cheese (or grated Pecorino cheese)
  • to taste black pepper (freshly ground)
  • to taste parsley
  • 1 clove garlic
  • to taste red wine vinegar (half a cup)
  • to taste extra virgin olive oil

Steps

  • To prepare the baked breaded anchovies, start by washing the anchovies under running water. In the water of the last rinse add half a cup of red wine vinegar.

    Drain immediately and place to drain in a colander.

  • To prepare the baked breaded anchovies, start by seasoning the breadcrumbs with grated Parmesan or Pecorino cheese, finely chopped parsley and garlic, and freshly ground black pepper.

  • Dab the anchovy fillets lightly with absorbent paper and then pass them in the breadcrumbs on both sides, exerting slight pressure to make it adhere better.


    Arrange the fish on a non-stick baking tray or lined with parchment paper.

  • Finally, sprinkle with olive oil and bake in a preheated oven at 350°F, middle rack, static function for about 10 or 15 minutes (or until desired level of browning).

    In the last few minutes, if desired, activate the grill function.

  • The baked breaded anchovies are now ready.

    Serve immediately after baking with a splash of lemon juice and raw extra virgin olive oil.

It is advisable to consume immediately. If necessary, store in the fridge, well-sealed in an airtight container, for 1 day.
