Baked salmon fillets with cherry tomatoes are simple to prepare, delicious, and a great idea for consuming this type of fish, which should always be on our tables.

Especially when consumed fresh, salmon is rich in nutritional properties being a good source of vitamins, minerals, proteins, and, in particular, essential omega-3 fatty acids.

These fatty acids lower overall bad cholesterol levels while raising good cholesterol levels, counteract free radicals, have anti-inflammatory properties, and, in addition to other beneficial properties, also aid muscle growth.

For this reason, many athletes regularly include this type of fish in their diet.

A study also found that the omega-3 intake from farmed salmon is higher than that of wild salmon, although farmed salmon also contains higher overall fat levels.

By preparing the salmon slices according to the recipe below, you can quickly and easily obtain tasty and tender fillets accompanied by cherry tomatoes, whose slightly acidic taste contrasts well with the flesh of this fish, enhancing its flavor.

Baking allows the properties of salmon to remain intact, unlike frying, for example.

It’s actually baking, clearly preceded by steaming, that best preserves the benefits that consuming this fish can offer our bodies.

Ingredients

  • 5 slices salmon (in fillets)
  • 14 oz cherry tomatoes
  • 1 fresh spring onion
  • 2 cloves garlic
  • lemon juice (from half a lemon)
  • to taste salt
  • to taste ginger (fresh or powdered)
  • to taste extra virgin olive oil
  • to taste pepper (black)
  • to taste thyme

  • Citrus Juicer
  • Sieve

Steps

  • To prepare the baked salmon fillets with cherry tomatoes, make an emulsion with half a lemon, olive oil, chopped garlic (so it can be easily removed), thyme, freshly ground black pepper, and fine salt.

  • Cut the cherry tomatoes and, if desired, remove some or all of the seeds. Season the tomatoes with salt, oil, and pepper.

  • Place the salmon fillets and cherry tomatoes on a baking tray lined with parchment paper. Distribute the finely chopped fresh onion over everything.

  • Drizzle the salmon with the emulsion. If needed, add a little more oil and then bake for 20 minutes.

  • Bake at 356°F (180°C), in a preheated static oven, for the time indicated above, on the lower middle rack.


    The cooking times clearly vary depending on the thickness of the fillets purchased.

  • The baked salmon fillets with cherry tomatoes are now ready.


    Serve immediately with a drizzle of raw olive oil and, if desired, with a light grating of fresh ginger or a sprinkle of powdered ginger.
