Hazelnut Lady’s Kisses are delicious cookies from Piedmont with main ingredients including hazelnuts and dark chocolate.
They originated in the city of Tortona in the 19th century, and the original recipe called for the use of Piedmont hazelnuts. In 1810, another version using almonds emerged alongside this one.
Their name is evidently linked to their appearance, as they resemble a woman’s mouth about to kiss.
Preparing them is simpler than you might think; just a little time is needed to create wonderful, refined cookies to serve to guests or enjoy with family.
Lady’s Kisses are suitable for any time of day and, if stored well in a cookie container, they will keep perfectly for several days.
These treats can also be made with the little ones at home, who will certainly have fun making them, though they will be even happier when they can eat them.

Ingredients
- 4.4 oz hazelnuts (or almonds)
- 1 cup all-purpose flour
- 4.4 oz sugar
- 4.4 oz butter
- 1/2 egg white (from a medium egg)
- 1 pinch salt
- 1/2 packet vanillin
- 5.3 oz dark chocolate
- as needed powdered sugar

Preparation
To prepare the hazelnut lady’s kisses, first leave the butter out of the fridge to soften. Cut it into small cubes to speed up the process.
Toast the hazelnuts in a small pan over medium heat, shaking it often to prevent burning. When they are golden and smell toasted, turn off the heat.
Place the hazelnuts on a damp cloth and rub them to remove most of their skin.
When cool, blend them until you have a flour-like texture.
In a bowl, work the sugar with the softened butter.
Next, add all the other ingredients and knead to obtain a homogeneous dough ball.
Let it rest in the fridge for a few hours wrapped in plastic wrap.
After the indicated time, make many small balls each weighing about 1/10 oz and arrange them not too close on a baking sheet lined with parchment paper.
Bake in a static oven, preheated to 300 °F for about 20 minutes, on the middle – lower rack.
Do not open the oven during baking, otherwise they will collapse.
Let them cool.
Meanwhile, melt the chocolate in a double boiler, then transfer it to a plate and let it cool a little. This way it will thicken and not run off the cookies.
Using a piping bag or simply a teaspoon, distribute the melted chocolate on half of the cookies on the flat side.
Before joining them, wait for the chocolate to be almost cold but still sticky, otherwise the top of the kiss will slide down.
After this step, sprinkle the cookies with powdered sugar.
The hazelnut lady’s kisses are now ready.
