Royal Icing for cookies is a type of glaze made with egg whites and is particularly thick, widely used for creating raised decorations with very precise lines on cookies, but also on cupcakes, muffins, or cakes.
The decorations achieved will dry quickly, becoming solid in consistency, keeping their shape well, and can be very detailed.
In general, in the recipe for Royal Icing, the type of ingredients required remains constant, but it’s necessary to adjust the amount of sugar to add based on the effect you want to achieve.
Clearly, with less sugar, the glaze will be more liquid, more suitable for filling spaces rather than creating details.
Achieving the latter is possible by referring to the recipe discussed here for cookie icing, with which you can create meticulous, almost precious decorations to make our cookies something unique and creative.

Ingredients
- 5 1/4 oz powdered sugar
- 1 oz egg whites (from fresh eggs or purchase pasteurized egg whites)
- Half teaspoon lemon juice (small teaspoon)

- 1 Piping bags disposable
- 2 Smooth Nozzles n.1 and n.2
- Electric Whisks
- Sieve
Steps
To prepare the royal icing for cookies, place the egg white in a bowl, add the powdered sugar (which I recommend sieving first), and start working with the electric whisks.
Then add a few drops of lemon juice and continue working until you get a dense, well-blended mixture without lumps.
Once the icing is prepared, immediately cover it with cling film until use. This applies even for just a few minutes of inactivity, as it begins to dry as soon as it comes into contact with air.
To proceed with the decoration, first attach the smooth nozzle or another of your choice to the piping bag. For decorations requiring great delicacy and precision, we can use n.1 or n.2.
If the nozzle gets clogged during decoration, you can unclog it with a toothpick.
If we need to fill small spaces (such as candy cane cookie decorations), good results are also achieved with n.3.
Transfer the icing to the piping bag and preferably close it with the appropriate clip or by twisting the free part of the bag over itself.
Place the cookies on a flat surface and start decorating according to your imagination.
After completing this phase, let the cookies dry well.
Royal icing for cookies has thus allowed us to create delightful decorations on our little cookies. Those in the picture are made with an excellent walnut shortcrust pastry that I recommend trying (for the recipe click here).
Royal icing can be stored in the fridge, with cling film contact, for about three days.
Already decorated cookies can be stored at room temperature, closed in an airtight container or a tin box, for about a week. The times, however, also depend on the type of cookie being decorated.
