Soft Cake with Cherries

Ingredients

  • 500 g cherries (ripe but firm)
  • 1 2/3 cups all-purpose flour
  • 3/4 cups cornstarch
  • 2/3 cups sugar
  • 4 1/4 oz butter
  • 3 eggs (large)
  • 1 packet baking powder
  • 1 packet vanillin (or grated organic lemon zest)
  • to taste salt (fine)
  • to taste powdered sugar

Steps

  • To prepare the soft cherry cake, start by melting the butter (cut into pieces) over a very low flame and then letting it cool down.

    Alternatively, you can use 1/2 cup of sunflower seed oil instead of butter.

    Butter and flour the cake pan (9-inch diameter) and cover the bottom with a disk of parchment paper cut to size.

  • Clean the cherries by removing the stem and pit.

    You can use a cherry pitter for this operation, or, as I did, a simple kitchen knife.

    In that case, simply cut the fruit in half and then remove the pit.

  • In a bowl, use the electric whisk to beat the eggs with the sugar and vanillin until you get a frothy mixture.

    Add the butter slowly while continuing to whisk.

  • Sift the flour, cornstarch, and baking powder directly into the bowl. Mix with the electric whisk, adding the salt just before you finish mixing.

  • Place the mixture in the pan and only at this point, pour the cherries over it, distributing them evenly and gently pressing them with the back of a spoon.

    This will help most of the cherries get into the batter.

    However, stop at the top layer of the batter, don’t push the fruit too far down, as it will tend to sink during cooking anyway.

  • Bake in a preheated static oven at 350°F for about 1 hour, on the middle rack. Always do the toothpick test before removing from the oven.

    Let it cool before removing from the mold.

    Sprinkle with powdered sugar and serve.
