Prepare the Baked Carrot Meatballs first by mashing the boiled carrots in a bowl and adjusting with salt and pepper.
Peel the onion and chop it. Add it to the carrot puree.
Also add the egg and grated Parmesan.
Finally, add the oat flour or breadcrumbs and the herbs, and mix with a spoon until you obtain a homogeneous mixture.
Form the meatballs and place them one by one on a baking sheet lined with parchment paper.
