The baked carrots with parmesan are a delightful side dish that is incredibly easy to prepare, crispy, and delicious! These are carrot sticks that we cook directly in the oven, placing them raw in a baking dish with oil, various herbs and spices, and lots of grated parmesan cheese, so that a crispy crust forms, which will be absolutely irresistible! A variation of the baked carrots that we’ve been making for years with the addition of cheese makes them super tasty!

The recipe is very simple: cut the carrots into sticks and season them with oil, various aromatic herbs like rosemary, garlic powder, oil, and salt. Sprinkle a baking dish with plenty of grated Parmesan cheese and place the carrots in a single layer. Bake for about 30 minutes at 356°F until the carrots become crispy.

A side dish suitable for accompanying both meat dishes and fish, or vegetarian dishes. They are prepared in a few minutes without pre-cooking. Simo and Cicci recommend

You can store baked carrots with Parmesan in the fridge for a few days, well-sealed in an airtight container.

You can use the aromatic herbs and spices you prefer, such as basil, mint, oregano, turmeric, chili pepper.

Instead of grated Parmesan, you can also use other types of cheese like pecorino or Grana Padano.

You can also cook the carrots in an air fryer, still at 356°F for about 25-30 minutes.

With this same recipe, you can also prepare other types of vegetables like potatoes, zucchini, or mushrooms.

You can also cut the carrots into rounds or alternatively cut them into pieces and then in half, extending the cooking times in this last case.
