Blueberry banana bread is a healthy, soft, and delicious dessert, without butter and with little sugar, with a batter that is made in 5 minutes. A truly fabulous new version of banana bread! Created to use overly ripe bananas that are too soft to eat on their own, this banana bread, like all the others you’ll find here on our blog, is prepared by making a banana, eggs, milk, oil, and flour batter in just a few minutes. To this basic batter, we add a shower of blueberries with their characteristic blue color which will turn a pleasant purple when baked. All these features make this banana bread super delicious, perfectly moist, and with an incredibly soft texture, a real treat!
The recipe is really simple: in a bowl, mix the mashed banana with the eggs, milk, oil, grated lemon zest, your preferred sweetener, flours sifted with baking powder, and finally, add the blueberries. Pour the obtained batter into a loaf pan and bake for about 50 minutes at 350°F in a preheated static oven.
The secret to a great banana bread is always using very ripe bananas that will be easy to mash and naturally sweet, allowing us to use little sugar if preferred. Regarding the sweetener, you can add as much as you prefer according to your taste. We use very little, precisely because of the bananas and their sweetness, but feel free to use the amount that you find right for you. As for the flours, we decided to use a mix of all-purpose flour and semi-whole grain flour, but if you don’t have it or don’t like the whole grain taste, just use all-purpose flour. - 1 banana
- 2 eggs
- 1 cup cups all-purpose flour
- 1 cup cups type 2 flour
- 3/4 cup cups milk
- 5 tbsp tbsps olive oil
- 1 cup cups blueberries (fresh or frozen)

- 1/2 packet baking powder
- 1/4 cup cups erythritol (or other sweetener)

Steps to make Blueberry Banana Bread
To make the blueberry banana bread, first peel the banana and place it in a bowl. Mash it with a fork until it becomes a purée.
Add the eggs and mix with a whisk.
Add the milk, then the olive oil, the sweetener, and the grated lemon zest, and continue to mix them into the banana.
Combine the sifted flours with the baking powder and mix well with a spatula.
Finally, add the blueberries which you have previously washed and dried well.
Pour the batter into a greased and floured or parchment paper-lined loaf pan. Add a few blueberries on top.
Bake in the preheated oven at 350°F for about 50-55 minutes. Let it cool, slice it, and enjoy.

You can keep this banana bread for 4-5 days at room temperature in an airtight container or a cake box.
You can also add dried fruit to the batter such as walnuts, pecans, hazelnuts, almonds, cashews, or pistachios.
You can use plant-based milk like soy, almond, coconut, or rice milk. Or lactose-free milk for a lactose-free version.
You can also bake the banana bread in an air fryer at 350°F for about 40 minutes.
