- 3 bananas
- 1/2 cup brown sugar (or other sweetener)

Steps to Prepare Carrot and Coconut Banana Bread
Start preparing the carrot and coconut banana bread by peeling 2 very ripe bananas and mashing them in a bowl with a fork to make a puree.
Crack the eggs and place them in the bowl, adding the brown sugar, vegetable oil, vanilla extract, grated carrots, coconut, raisins, and coarsely chopped pecans. Stir quickly to obtain a well-mixed batter.
Sift the flour with the baking powder and add it to the bowl, also adding the cinnamon and ginger powder. Mix well until you get a homogeneous dough.
Flour and oil or line a loaf pan with parchment paper, and pour the prepared batter into it. Smooth it out with a spatula.
Peel the remaining banana, cut it in half, and place it on the batter. Decorate with some remaining nuts and bake the banana bread in the preheated oven at 350°F for about 50-60 minutes, checking for uniform cooking with a toothpick test: insert it into the cake, and when it comes out dry, it means the cake is well-cooked; otherwise, extend the baking time.
