Cold Potato and Tuna Cakes, easy to make and delicious!

The cold potato and tuna cakes are a fresh and delicious idea for a summer appetizer or main dish. The main ingredient of these cakes is potatoes, which we can prepare in countless ways all year round: baked, as gateau, as a side dish, to dress pasta dishes like pasta, to make gnocchi, and so on. Naturally, in summer they’re perfect for making large salads like, for example, the Greek potato salad, or with green beans and pesto. Today we offer you a delicious idea with potatoes and tuna where the only thing to cook is the potatoes. These cakes, inspired by a delicious Peruvian recipe, the causa limeña or rellena, are prepared by forming layers of potatoes, layers of avocado, and layers of tuna salad and hard-boiled eggs. Very easy to make because you just need a spoon and a pastry ring to form them in a single-serving version, or if you prefer, you can also make them in a large format using a baking dish.

The preparation is very simple: mash the potatoes and season them with oil, salt, pepper, and apple cider vinegar or lemon juice. Mash or blend the avocado to turn it into a puree, and separately season the tuna with hard-boiled eggs, chopped red onion, and mayonnaise. Use a pastry ring to form a layer of potatoes, one of avocado, one of tuna and hard-boiled eggs salad, and finally complete with a layer of potatoes. Gently remove the pastry ring, and your cakes are ready. If you like, you can decorate them with sesame seeds and fresh mint.

Fresh, healthy, and tasty, these cold potato cakes are an intriguing idea for lunch and dinner every day or to impress your guests. Try them and let us know what you think!
