Steps to prepare Cold Potato and Tuna Cakes
To prepare the cold potato cakes, first wash the potatoes thoroughly and cook them in a pot full of water for about 30 minutes from boiling or until they are tender. Peel them and allow them to cool slightly.
Cut them into pieces and mash well with a fork or a potato masher to turn them into a puree.Add oil, vinegar or lemon juice, salt, and pepper and mix well so they gain flavor. Allow the puree to cool thoroughly.
Meanwhile, peel an avocado and blend it with a few tablespoons of oil, or if it is very ripe, simply mash it with a fork.
Drain the tuna from its preserving oil and put it in a bowl.
Add the finely chopped red onion, hard-boiled eggs cut into small pieces, and mayonnaise.
