Indeed, the contrast between the sweetness of the peaches and the saltiness of the prosciutto, not to mention the crunchiness of the bread and the softness of the brie, makes these grilled peach bruschetta truly irresistible!
Preparing them is very simple: we slice the peaches thinly and grill them for a few moments. We toast the slices of bread in a pan where we have melted some butter, add the brie on the toasted side and let it melt slightly. We finish the bruschetta with slices of grilled peaches, prosciutto, and if we like, a drizzle of honey.
For this recipe, we used nectarine peaches with the characteristic smooth skin that distinguishes them from the classic peaches, which allowed us to use them without peeling. We also used brie, this famous creamy French soft cheese. Another essential ingredient is the prosciutto and, of course, the bread, the base of our bruschetta. We used whole grain bread with its rustic flavor which suited perfectly for these bruschetta.

Steps to Prepare Grilled Peach and Brie Bruschetta
To prepare the grilled peach bruschetta, first wash the peaches well and cut them in half. Remove the pit and then slice them thinly.
Place them on a hot grill and let them cook for a few minutes.
Slice the brie and then cut it into pieces. Divide each slice of prosciutto into three parts.Melt a knob of butter in a skillet and place a slice of bread in it. Cook on one side for a few minutes until well golden, then flip it.
Cover it with some slices of brie and let it melt slightly using a lid.
Add the grilled peach slices and the prosciutto.
Repeat this process for each slice of bread to make four bruschetta.If you like, you can drizzle them with honey at this point and enjoy.

We used whole grain bread, but of course you can use any type of bread you prefer.
Do I have to grill the peaches, or can I cook them another way?
If you love the sweet and savory contrast, you can also slice or dice the peaches and caramelize them in a pan with some sugar and a splash of water. If you prefer not to cook them and the peaches are ripe enough, you can simply slice them and use them as is.
I don’t have brie or don’t like it. Can I substitute it with another cheese?
Yes, of course, you can choose any cheese you prefer.
What if I don’t want to use prosciutto?
You can omit it and customize these bruschetta as you like.
