How to prepare Muhammara
To prepare the muhammara, first cook the peppers. Wash them, dry them, and roast them on a grill or alternatively in the oven for about 30-35 minutes at 392°F. Cook them, turning occasionally, until the skin becomes black.
Place them in a bowl, cover with plastic wrap, and when they are cool enough, remove both the skin and the internal seeds.
Toast the walnuts or hazelnuts in a pan, and separately the breadcrumbs with a drizzle of oil.
Put the peppers in a food processor and add the breadcrumbs, nuts, olive oil, lemon juice, molasses or maple syrup, cumin, chili, and salt.Blend all the ingredients until you get a smooth and homogeneous cream.
Garnish the cream with oil, chili, and fresh parsley or mint.
