The pasta with zucchini flowers, burrata, and speck is a creamy, flavorful first course ready in less than 15 minutes. A very quick recipe perfect for when you are in a hurry but don’t want to give up a good plate of pasta. Just like pasta with cherry tomatoes and burrata or pasta with ricotta and mortadella, in fact, the sauce is prepared while we bring the pasta water to a boil, and it will be ready when we drain the pasta directly into the pan. The important thing is to make the speck crispy, add the zucchini flowers which will cook in just over 2 minutes, and add the burrata which will become creamy in just a few moments! Easy, quick, and delicious!
As we mentioned, the recipe is very simple: we sauté the garlic with oil, add the speck and, once it’s crispy, the zucchini flowers cut into strips. We add the burrata and mix in a splash of milk if necessary. We drain the pasta al dente directly into the pan, toss with a few tablespoons of pasta cooking water, and serve with more burrata and chopped basil.
Few ingredients and a dish full of flavor is born, perfect for lunch and dinner. Try it and let us know what you think!
