Simo and Cicci recommend
Pumpkin and sausage risotto is excellent hot, but you can store it in the fridge for up to two days. You can reheat it or even gratinate it in the oven.
As an alternative to Carnaroli rice, you can use Vialone Nano, Arborio, or parboiled rice.
If you prefer, you can replace the onion with shallots or even with minced garlic, or simply omit it.
Instead of rosemary, you can use fresh chopped parsley.
At the end of cooking, you can add diced provolone or mozzarella for an extra stringy risotto!
