Simo and Cicci recommend

They keep for up to 2 days in an airtight container, although for a crunchy taste we recommend consuming them on the same day. You can freeze them raw.

You can change the filling of these easy puff pastries by replacing the apples with other diced fruits like strawberries, peaches, raspberries, or with chocolate chips, chopped nuts like almonds, hazelnuts, walnuts, pistachios, or by replacing the custard with Nutella, jam, or fruit preserve of your choice, pistachio cream, almond cream; or with ricotta cream with lemon, orange, or chocolate.

For a gluten-free version, use gluten-free puff pastry and replace the flour in the custard with potato starch or rice flour.
