To prepare rice noodles with vegetables, start by cooking the vegetables. Clean the broccoli by removing the hardest part of the stem and divide it into florets.
Halve the bell peppers and remove the inner seeds and filaments. Cut them into strips.
Peel and chop the onion.
Place all the vegetables on a baking tray lined with parchment paper. Season with salt, pepper, and oil, and bake for about 20-25 minutes at 392°F.While the vegetables are baking, prepare the sauce.
