You can store these boats in the fridge for up to 2-3 days in an airtight container. You can prepare both the boats and the tuna mousse in advance, keeping the shortcrust boats in a closed container at room temperature and the tuna mousse in a container in the fridge.
You can use ready-to-use shortcrust pastry or ready-made boats, or alternatively, puff pastry also in a gluten-free or whole-grain version.
If you have enough time, you can let the boats rest in the fridge for at least an hour before baking them so that they perfectly maintain their shape.
If you don’t have legumes available for blind baking, you can stack another mold of the same size to prevent the boats from puffing up.
You can replace the tuna mousse with salmon mousse or with feta and pumpkin cream.
