The Skillet Potato Pizza is a tasty and easy-to-make recipe, a delicious main course with zucchini flowers, ham, and smoked cheese. A valid alternative to the classic potato gateau perfect for summer when it’s so hot that turning on the oven becomes difficult or even impossible. But it’s so good that we can prepare it all year round, changing the topping each time! It is a potato cake that is cooked directly in the skillet in just 10 minutes. A quick and practical preparation that can be conveniently made in advance because it’s also good cold, suitable for everyday cooking because it doesn’t need to rise as it’s yeast-free, to be accompanied by a seasonal side dish. But it’s perfect for many other occasions: from appetizers to aperitifs to a buffet.

The dough is very simple and closely resembles the classic potato gnocchi dough: mash the potatoes and add flour, one egg, and salt. Then spread the dough quickly worked with hands directly in the skillet, cook it first on one side covered over medium heat for 5 minutes, flip it and season with zucchini flowers flavored with oil, salt, and pepper, cooked ham and smoked cheese. Cook for another 5 minutes.

A soft base that lends itself to any type of topping! The cooked ham can indeed be replaced with other cold cuts like speck, salami, mortadella, turkey breast, or alternatively with slices of smoked salmon or tuna in oil.
