Soba noodles with peanut butter and vegetables are a tasty and creamy dish, ready in less than half an hour, perfect for lunch and dinner. These are noodles seasoned with vegetables such as carrots and zucchini (but you can also choose other types of vegetables like bell peppers, mushrooms, or broccoli), enriched by a very creamy, spicy, and aromatic sauce based on coconut milk, peanut butter, soy sauce, and lemon juice. A surprising dish inspired by Thai cuisine that is prepared in very little time because the focus of the recipe is this peanut butter sauce obtained simply by mixing all the ingredients. Then for the seasoning, we can use whatever vegetables we want, even leftovers.
The preparation is very simple: we make a sauce with coconut milk, soy sauce, peanut butter, and lemon juice. We let it cook for a minute from boiling. We cook the vegetables with oil, minced garlic, turmeric, and ginger powder. We cook the noodles for the time indicated on the package and season with the prepared vegetables and peanut sauce.
For this dish, we used soba noodles, but you can use any other type of noodles or udon. As peanut butter, we used crunchy with whole peanut pieces, or you can also use classic peanut butter. The coconut milk is the canned one, while for vegetables, as we previously indicated, you can have fun with whatever you want or have at home!

How to prepare Soba noodles with peanut butter and vegetables
We start preparing the noodles with peanut butter and vegetables by making the sauce: pour the coconut milk into a bowl and add the soy sauce, peanut butter, and lemon juice. Mix with a whisk to combine all the ingredients and pour into a small pot. Cook until the sauce reaches a boil and, after about a minute, remove the pot from the heat. Let it cool.
Prepare the rest of the seasoning by cleaning all the vegetables. Wash, trim, and slice the zucchini in half and then into slices. Scrape the carrots and cut them into slices. Peel the onion and after cutting it in half, slice it. Peel the garlic as well and finely chop it.
Pour the garlic with the onion into a non-stick pan and add the turmeric, ginger powder, and if you like, chili powder. Sauté for a few moments, then add all the vegetables along with the soy sauce and cook for about ten minutes or until the vegetables are soft yet still crunchy.
Cook the soba noodles according to the package instructions and once ready, drain them directly into the pan with the seasoning. Add the sauce and mix until everything is well combined.
Serve the noodles with peanut butter and vegetables, garnishing with coconut and peanut sauce.

We recommend consuming these noodles at the moment, but you can store them in the fridge for a few days, reheating them by adding some water so they become creamy again. You can store the sauce in the fridge for a few days.
