In the recipe we propose today, we use all parts of the shrimp, both the flesh and the shells, thanks to which we obtain a bright orange cream that, combined with the spaghetti, will give the pasta an unmistakable taste and aroma.
The preparation is very simple: clean the shrimp by blending the waste with a drizzle of oil and then filtering the obtained mixture with a strainer. Sauté the shrimp in a pan with oil. In a large pan, brown a minced garlic clove, add the diced tomatoes and pasta cooked al dente, let it rest by adding a little of the pasta’s cooking water, add the shrimp cream, grated lemon zest, and toss everything. Serve the spaghetti adding the shrimp, more grated lemon zest, and fresh basil.

How to Prepare Spaghetti with Shrimp
To prepare spaghetti with shrimp, first clean the shrimp: remove the shells, intestines, and separate the heads. Cut off the eyes.
Sauté the shrimp in a pan with a drizzle of oil for a couple of minutes.
Place the whole shrimp heads in a tall glass and add a drizzle of oil.
Blend until you get a creamy and smooth mixture.Strain the mixture through a strainer to obtain a cream. (Discard the waste)
In a large pan, brown a minced garlic clove with the oil and add the diced tomatoes. Sauté for a few minutes.
Meanwhile, cook the spaghetti in salted boiling water. Drain the pasta al dente directly into the pan with the tomatoes. Add a few ladles of the pasta cooking water to finish cooking and stir continuously.
Add the shrimp cream and grated lemon zest.
Serve the spaghetti with shrimp, garnishing each plate with the previously sautéed shrimp, more grated lemon zest, and basil.
Advice:
It is preferable to consume this dish immediately or at most store it for one day in the fridge.
Instead of basil, you can add fresh parsley, and replace tomatoes with cherry or grape tomatoes.
