The oriental soup with glass noodles is a flavorful hot dish, vegan, spicy, and simple to prepare. An Asian-inspired recipe rich in vegetables cooked in a fragrant coconut milk broth. It is a completely vegan creamy and aromatic dish that starts from a base of carrots, onions, garlic, and ginger to which we add spices such as curry and turmeric, the grated zest of a lemon or lime, and peas. We cover with coconut milk and hot broth and let it cook over medium heat for about twenty minutes so that all the flavors blend and enhance each other. We also add lemon juice and soy sauce, adjust the salt, and then the previously blanched broccoli. Finally, we add the noodles and in just over half an hour our soup is ready.
To prepare this soup, we used coconut oil which can be replaced with other types of vegetable oil, and canned coconut milk with a creamy consistency. We also used vegetables such as carrots, onions, broccoli, and peas, but the variety of vegetables and legumes you can use for this soup is extensive. For example, you can use mushrooms, spinach, potatoes, bell peppers, cabbage, savoy cabbage, chard, and you can also use frozen vegetables to decrease cooking times. If you want to make this dish complete, you just need to add a protein source like chickpeas, lentils, beans, or tofu.
At the end of cooking, we also added a particular type of noodles known as glass noodles or cellophane noodles. They cook very quickly and their main characteristic is that these noodles are transparent. They are great to add to this soup, but if you don’t have them available, you can use rice noodles or alternatively enjoy the soup as is, maybe accompanying it with some homemade naan bread or with basmati or whole grain rice.
Like the vegetable curry, this soup with flavors and scents of oriental inspiration is a comfort food that will definitely warm us during winter and the colder seasons, but that we can enjoy warm or cold even when temperatures begin to rise. All you need to do is gather all the ingredients to try this oriental soup with glass noodles as soon as possible.
