Air Fryer Gratin Vegetables: Easy, Crunchy, and Ready in Minutes! If you’re looking for a light and tasty side dish, perfect for summer, this recipe is for you. No oven, no long waiting: with the air fryer you can prepare crunchy-outside and soft-inside gratin vegetables in just a few steps. I’ve chosen zucchini and eggplants, but you can also use peppers, onions, potatoes, or tomatoes, depending on what you have in the fridge.
This recipe is vegetarian and super versatile: ideal as a side dish, it can also become a tasty appetizer or a light main course. Delicious when freshly made, but also perfect to take to work or for a lunch break, because they are great even at room temperature. Ingredients

  • 1 eggplant (medium/large)
  • 3 zucchini (medium)
  • 1/2 cup white wine
  • salt
  • pepper
  • 2 cloves garlic
  • parsley
  • 0.7 oz grated Parmesan cheese
  • 0.3 oz breadcrumbs
  • 1 drizzle extra virgin olive oil

Preparation

  • Take the vegetables and slice them vertically, first in half and then in half again, to get more or less even wedges. Arrange them directly in the air fryer basket, without using parchment paper, close together but not too stacked. Pour a dash of white wine over the vegetables to flavor them, add salt, pepper, finely chopped garlic, and chopped parsley. Sprinkle with a layer of Parmesan and breadcrumbs to create a crust and finish with a drizzle of extra virgin olive oil.

  • Cook the vegetables in the air fryer at 320°F for about 18 minutes. During cooking, check often: the vegetables should be beautifully golden and crispy. If necessary, extend cooking by a few minutes until you achieve the right golden color.

NOTES

If you prefer an even more flavorful touch, you can also add some chili flakes or aromatic herbs to taste. The air fryer gratin vegetables are also excellent the next day: just store them in an airtight container and heat them slightly for a quick lunch. If you don’t have an air fryer, you can also prepare them in the oven, slightly increasing the cooking time.
