For those who are not familiar with it, stevia is a natural sweetener, specifically a plant from which this sweetener is derived, and it is now available in all supermarkets in various forms. The only caveat is to read the labels carefully and purchase only pure stevia because stevia comes in many forms, but it is often mixed with conventional chemical sweeteners. So, we think we are consuming a natural substance, but it is actually mixed with something else! You can easily avoid this problem by carefully reading the labels.

It’s true that stevia is a great sugar substitute, especially for those looking to diet or control their glycemic index, but it is also true that since it is derived from a plant, it has a strong licorice aftertaste. It does not pair well with all preparations, and I had to try several times to find a recipe that satisfied me.

To replace sugar in your dishes, consider that pure stevia has a sweetening power equal to ten times that of regular granulated sugar, but as I mentioned before, due to the strong licorice aftertaste, I strongly advise against taking one of your classic recipes, dividing the sugar amount, and proceeding. Because you risk throwing everything in the trash. You won’t find it as sweet as you expect, and the aftertaste, which can be tolerable in small quantities, would become too strong in large amounts.

Another tip: if you want to try replacing sugar with stevia in one of your recipes, you can try to cover the licorice aftertaste with small strategies to mask it, such as using lemon juice or flavors like cinnamon and anise.

Ingredients

  • 3 apples
  • 1 lemon juice
  • 3 eggs
  • 30 g stevia
  • cup milk
  • 1⅛ cup all-purpose flour
  • to taste ground anise (or flavor)
  • to taste ground cinnamon
  • 1 jar yogurt
  • 1 packet baking powder (vanilla flavored)

For mixing, I recommend an electric whisk, and for baking, a 9.5 inch springform pan.

Preparation

  • First, peel and slice the apples on a plate and cover them with the lemon juice to prevent browning.

  • In a bowl, place the eggs and stevia and start whisking with an electric whisk until well whitened. Lower the speed and add the milk and yogurt, then gradually increase the speed and add the flour until the batter is smooth and add the flavors, finally add the baking powder.
    Turn off the whisk and continue adding the apples by hand, leaving aside about half of one. Pour the batter into a lightly buttered and floured pan.
    Bake in a preheated oven at 350°F for about 40 minutes. Always do the toothpick test, but do not over-brown the surface.

NOTES

This cake keeps well for about three days at room temperature if kept in classic cake holders with a lid.

Recently, powdered sweeteners have also become available, so you could sprinkle it lightly on the surface with this sweetener powder.
