Banana Bundt Cake in Air Fryer: Soft and Light

in

Soft, fragrant, and naturally sweet thanks to mashed bananas: this bundt cake in the air fryer is the light and energy-packed dessert perfect for breakfast and snacks.

If you’re looking for a soft, light dessert perfect for starting the day with the right energy, this banana bundt cake in the air fryer is just what you need.
I made it using mashed bananas instead of most of the sugar, adding just a little sugar and stevia, a tiny bit of oil, and a splash of water for a soft and fragrant batter. The result is a cake with a moist, delicate, and naturally sweet heart, ideal for breakfast, snacks, or to enjoy with a cup of tea or coffee.
Cooking in the air fryer makes it even simpler and faster: in just minutes, you’ll have a homemade dessert with few fats and lots of flavors, filling the kitchen with a delightful scent. A perfect recipe also for those who want to indulge in a sweet treat without guilt.

  • Difficulty: Very Easy
  • Cost: Inexpensive
  • Preparation time: 5 Minutes
  • Portions: 8
  • Cooking methods: Air Frying
  • Cuisine: Italian
  • Seasonality: All Seasons

Ingredients

  • 7.8 oz banana
  • 1 egg
  • 1/4 cup sugar
  • 1.4 oz stevia (or erythritol)
  • 2.5 tbsp vegetable oil
  • 3 tbsp water
  • 1.25 cup all-purpose flour
  • 1/2 packet baking powder

Tools

For baking, I used a 20 cm cake pan.

  • 1 Bundt Cake Pan
  • 1 Air Fryer
  • 1 Electric Whisk

Preparation

  • In a large bowl, mash the ripe bananas with a fork until you obtain a puree.
Add the sugar, stevia, and egg, then mix until you have a soft and homogeneous mixture.

  • Using the electric whisk, begin to work the mixture, gradually adding the oil and water.
Gradually fold in the flour, continuing to mix, and finally add the baking powder, until you obtain a smooth and creamy batter, without lumps.

  • Pour the batter into a lightly greased bundt pan, level the surface, and transfer to air fryer at 302°F (150°C) for about 25–30 minutes.
In the last minutes, always do the toothpick test: if it comes out dry, the bundt cake is ready!

Final Notes and Tips from Zia Debby

If you prefer traditional oven baking, you can bake it at 320°F (160°C) for about 35 minutes in static mode, always performing the toothpick test before removing from the oven.

For an even more delicious result, you can add a handful of dark chocolate chips, chopped nuts, or a pinch of cinnamon to the batter, which pairs wonderfully with the banana flavor.

Store the bundt cake under a cake dome or in an airtight container: it will remain soft and moist for 2–3 days, ready to slice whenever you fancy a light, homemade treat.

If you try this banana bundt cake in the air fryer, save it among your favorite recipes and share it with those who love soft and light homemade desserts.

FAQ (Questions and Answers)

  • Can I use bananas that are not too ripe?

Yes, but the result will be slightly less sweet and fragrant. If the bananas are not very ripe, you can add an extra tablespoon of sugar or sweetener to balance the flavor.

  • Can I replace water with milk?

Absolutely! You can use the same amount of milk instead of water to achieve an even softer batter and a slightly richer taste.
