Blueberry Tartlets

Blueberry tartlets: an easy and refined dessert with few ingredients
These blueberry tartlets came about almost by chance, a tasty idea to avoid wasting leftover shortcrust pastry and custard cream from a previous preparation. Just take the individual molds, roll out the pastry, fill them with the cream, and garnish with plenty of fresh blueberries. A touch of homemade jelly—very simple, with just water, sugar, and cornstarch—made it all the more inviting and shiny.
Blueberries, in addition to providing a vibrant color and a slightly tart taste that perfectly marries with the sweetness of the cream, are rich in antioxidants and very good for health! These tartlets are perfect as a dessert after a meal, for an elegant snack, or to be prepared in advance and kept in the fridge for 2-3 days, ready for the right occasion.
The preparation? Super quick! If you already have the pastry and cream ready, it will only take a few minutes: the pastry bakes quickly in the oven or air fryer, and the result is a refined yet very simple dessert to make. Try them now!

Ingredients

  • 12.35 oz shortcrust pastry
  • 8.82 oz custard cream
  • 7.05 oz blueberries (small)
  • as needed jelly (for tarts)

Tools

  • 4 Tart Molds

Preparation

  • Divide the shortcrust pastry into four equal parts and form balls with your hands. Take each ball and, with the help of your palms, press it directly into the individual smart molds, shaping it well along the edges. If you are using silicone molds, there’s no need to butter or flour them.
Bake in a preheated oven at 356°F for about 8 minutes, until the surface is lightly golden but not too dark. Once baked, you can turn them upside down and easily remove them from the mold even when warm.
Now onto the filling: spread the custard cream on each tartlet, using a fork to spread it evenly and fill the entire concave part. After washing and drying the blueberries, arrange them on the tartlets as desired. I started from the outer circumference and continued until covering the entire surface.

  • For a shiny and inviting final touch, brush the blueberries with a bit of jelly for tarts and… our tartlets are ready to be enjoyed!

NOTES

Right Molds 🧁 → If you use silicone molds, no need to butter them. If you use metal ones, it’s better to grease them lightly with butter and flour.
Perfect Baking 🔥 → Every oven is different! Check after 7 minutes: the pastry should be golden but not too dark.
Air Fryer 🍃 → Want a quicker version? Bake the bases at 320°F for 5-6 minutes.
Delicious Variants 🍓 → Try replacing blueberries with raspberries, strawberries, or a mix of berries!
Storage ❄️ → The tartlets stay fresh in the fridge for 2-3 days, best if covered with a cake dome.
