Brownie cookies or brookies soft yet crispy cookies, a nice mix between cookies and brownies. For chocolate lovers, they are an ideal cookie enjoyed from breakfast to after dinner, including snack time.
The dough for these cookies stays quite soft, and to place them on the baking sheet, I suggest using two spoons. Use one spoon to scoop the dough and the other to push it onto the baking sheet. I recommend spacing the cookies apart because they will flatten out a bit before baking and a little more during baking. No need to chill the dough, and baking time is just over 15 minutes, making this a quick cookie to prepare.

- 8 oz dark chocolate
- 1/4 cup butter (soft)
- 2 eggs
- 1/4 cup sugar
- 1/3 cup brown sugar
- 1 pinch salt
- 3/4 cup all-purpose flour

To mix these brownie cookies, we used an electric whisk and to shape the cookies, two classic soup spoons, filling the first three-quarters and using the second to place them on the baking sheet.

Preparation
The preparation is simple, but you must start by melting the chocolate. You can choose to do it in a double boiler on the stove or, as we do, directly in the microwave.
Cut the dark chocolate into pieces and put it in a glass bowl.
To melt the chocolate in the microwave, use a medium setting and proceed in 30-second increments, stirring the chocolate well each time.
When the chocolate is melted, immediately add the butter in pieces and mix well to make everything homogeneous.
In another glass bowl, put the eggs with all the sugar and mix well with the electric mixer at maximum speed until the eggs are well whipped.
When the eggs are nice and fluffy, add the flour and salt; continue mixing with the electric whisk, but lower the speed a bit.
Now it’s time to add the melted chocolate with the butter to the dough, mix well, and you will get a soft but consistent dough.
With the help of two spoons, prepare your cookies on two baking sheets covered with parchment paper. Don’t worry if you see the dough spreading a bit on the sheet even before baking; try to position the dough in a compact mound as you push it with the second spoon. But don’t worry if you see it soon settling on itself; they need to become round and flat cookies in baking.
When you have formed your cookies, bake them in a preheated oven at 350°F for 16/18 minutes, depending on the size of the cookie. You will notice they are cooked when they are dry on the surface and detach well from the parchment paper. Be careful that they are even softer when hot and break easily. Only test the cooking, then detach them from the parchment paper when they are cold.

Brownie cookies or brookies keep well for several days if stored in boxes with lids. They are very delicious and have an intense chocolate flavor, which will be appreciated by both adults and children.

Can chocolate chips be added?
