You can prepare cold pasta with ricotta and tomatoes in just a few minutes, using the blender to get a creamy sauce with which to dress the pasta directly as you drain it without needing to cool it under water.
You just need to have ricotta and red tomatoes at home, and you can prepare an excellent single dish to enjoy immediately or store in the fridge for your appetizers.
Personally, I prefer to enjoy this pasta as it is, but you can enrich it with a few tablespoons of mayonnaise or with sweet and sour peppers. Here are the recipes

The ingredients are few, simple, and easily available, especially in the summer season
- 7 oz pasta (short)
- 1/2 cup tomatoes (red)

- 1 tbsp extra virgin olive oil
- 7 oz ricotta
- 4 leaves basil
- 0.7 oz red onion

Preparation
The preparation of this cold pasta with ricotta and tomatoes is simple and quick.
While preparing the sauce for the pasta, I recommend bringing about 6 cups of salted water to a boil. Put the tomatoes, oil, salt, pepper, basil, and ricotta in the blender cup and blend for a few seconds. Finally, add the red onion, blend again, and the sauce will be ready. When the water boils, cook the pasta for the time indicated on the package; when it’s cooked, drain it and dress it directly without cooling it under running water. Consume the cold pasta immediately or store it covered in the refrigerator.
