Crunchy Roman Pizza with Sourdough Starter, the typical crunchy Roman pizza, known for its high digestibility, can be quickly prepared at home using only sourdough starter. The Roman crunchy pizza is typically made with very little yeast, high hydration, and a long fermentation to make it crisp and digestible. The sourdough starter for this preparation does not need to be refreshed; you can also use the “recycled starter”. Personally, I try to keep my sourdough starter active, which I then use for both sweet and savory recipes, but when I have a large amount and don’t have the time to knead and follow the fermentation, I use it for quick recipes like this. Today, I prepared an excellent crunchy pizza.

Ingredients
For those without a sourdough starter, replace it with 270g flour, 130g water, and 1g yeast, knead everything and let it rise for at least 12 hours.

- 3 tbsps extra virgin olive oil
- to taste salt
- to taste rosemary

Preparation
Preparing the crunchy Roman pizza is easy and quick, you can enjoy it in a few minutes.
To explain the steps, I’m providing the video so you can’t go wrong.
Dust the work surface with flour, place the sourdough starter on it, and with the help of a rolling pin, roll it out into a very thin layer, a few millimeters thick. Grease the baking tray and roll the dough out onto it, lightly grease the surface, add salt and rosemary to taste. Bake in a preheated oven at 428°F until golden, about 12 minutes, and enjoy.
