Halloween Cookies 🎃 simple shortcrust cookies filled with hazelnut cream, but you can also fill them with jam, pistachio or any cream you prefer. You will need two cookie cutters in the shape of a pumpkin and a ghost about 3 inches high. These are very quick cookies to make for which I prepared my decorated cookie shortcrust that bakes in just 10 minutes at 356°F. You can prepare these cookies to brighten up the snacks of the little ones during the Halloween holiday, but they will also be appreciated by adults for their taste and crispness.

Ingredients
They are shortcrust cookies, so simple ingredients to find in our kitchens
- 1 egg
- 2 cups oz all-purpose flour
- 3/4 cup oz powdered sugar
- 1/2 cup + 1 tbsp oz butter (cold from the fridge)
- to taste vanilla flavor
- 1/4 cup oz hazelnut cream
- 1 tbsp oz vanilla-flavored powdered sugar

Preparation
The preparation of this shortcrust using the stand mixer is very quick, and the baking of the cookies takes only 10 minutes; you will see black specks in the dough because I used chopped vanilla beans.
Place all the ingredients in the stand mixer bowl and start the mixer with the paddle attachment at low speed.
Initially, you will see the dough very crumbly, but let the mixer run for a few minutes, and you will see a compact and soft shortcrust form.
Roll out the shortcrust to a thickness of about 1/4 inch on a floured work surface and start cutting the cookies.
When cutting the cookies, you need to cut two identical shapes for each finished cookie, one you leave intact, the other you have to carve before baking, with the help of a small knife or the tip of a knife, being careful not to ruin the shape, as you see in the photo.
Bake the cookies for only 10 minutes in a preheated oven at 356°F, mine are slightly overcooked because some were too thin; try to roll them all to the same thickness.
When you take the cookies out of the oven, you can dust with powdered sugar those that will be placed on top of the finished cookie, and spread hazelnut cream on the uncarved cookies.
Assemble your cookies by placing the carved ones on top of the hazelnut cream. As you see from the photo, the powdered sugar looks great on the ghosts, for the pumpkins I leave the choice to you, personally, I prefer the latter to be the color of the shortcrust, but have fun decorating them as you like.
NOTES
These Halloween cookies keep very well wrapped in plastic wrap or in tin boxes for many days, so you can prepare them in advance and also have fun packaging them individually in food bags to give to children on Halloween night. You can see some cookie packages here and here.

No, this shortcrust can be used immediately, but you shouldn’t let it warm up by handling it too much with your hands, so I always recommend after cutting the cookies to quickly work the leftovers to roll them out again or this time pass them for a few minutes in the freezer wrapped in plastic wrap.
Can they be filled with jam?
Of course, you can fill these cookies with any cream you prefer, as long as it is a slightly thick filling.
