The Jova Eggs immediately intrigued me while browsing online. This recipe is all the rage on social media, and I decided to try it too!
In reality, it’s a preparation that has existed for a long time under various names, such as ‘cloud bread’ or ‘keto bread.’ But today, everyone knows it as the favorite breakfast of the great Jovanotti!
Needless to discuss who invented it first: they are now famous as Jova Eggs, and that’s how we prepare them as well.
They are made in a few minutes: those with energy can whip the egg whites by hand… but I always use electric beaters, much more convenient and faster!
The original cooking calls for the oven at 356°F for about 7-8 minutes, but I chose the air fryer at 320°F: perfect result, and without turning on the oven!

Ingredients
- 2 eggs
- salt

- 1 Air fryer
Preparation
Separate the egg whites from the yolks and whip the egg whites to stiff peaks.
They can also be whipped by hand, but with electric beaters it’s much easier and faster!
No salt, no lemon: to get perfect peaks, just a little patience.
With electric beaters, it will take about 3 minutes to achieve a firm and frothy consistency.
To the yolks, add a pinch of salt and pepper, to taste.
Mix well with a fork to make them homogeneous.
With a kitchen brush, take a bit of yolk and draw two circles on the parchment paper.
They don’t have to be perfect: they’re just a guide for placing the egg whites.
Now, with the help of two spoons, place the whipped egg whites on the circles, forming two soft mounds.
Finally, with the remaining yolk and the help of a kitchen brush, gently brush the surface of the mounds.
Try to cover everything well for a perfect browning.
Now we can cook:
➤ In a preheated oven at 356°F for about 8 minutes,
or
➤ In an air fryer at 320°F for the same time.
After 6 minutes, take a look: each fryer has its power, and the result changes!
NOTES
– For a milder taste, you can skip adding pepper to the yolks.
– The egg whites must be well whipped, or they’ll collapse during cooking.
– For a richer flavor, you can add a teaspoon of grated Parmesan to the egg white before whipping.

Can I make Jova Eggs in advance?
Jova Eggs are best enjoyed fresh as they only require a few minutes to prepare.
However, you can make them shortly beforehand and warm them up for a few seconds in an air fryer or skillet, but the texture won’t be exactly the same.
