No-bake Moretta cake, recipe in air fryer: a clever summer variation of the classic Moretta cake that you already find on the blog! This time I wanted to adapt it to the season’s needs: it’s hot, the oven stays off, but the craving for good sweets doesn’t take a vacation. And so, with the air fryer and a 8-inch pan, I baked a soft, tall, and super chocolatey cake, perfect from breakfast to after dinner. If you prefer it even taller, I recommend using a 7-inch pan. The batter is prepared in a few minutes: whole eggs are whipped with sugar, without separating the whites. In 30 minutes of baking, we have a fragrant and moist cake, which stays soft for days if stored in the classic cake carrier with a lid. Also excellent to fill with your favorite creams and ideal as a base for birthday cakes. In short, an easy and quick recipe that will make you fall in love at the first bite!

I recommend weighing all the ingredients first: this way you’ll prepare the batter in just 5 minutes, stress-free and without forgetting anything!
To whip the eggs with the sugar, I use an electric whisk, which allows me to get a light and fluffy mixture in no time. It can also be done by hand, of course, but it requires a bit more energy and patience.
🥣 Batter preparation
The preparation is really simple and quick!
In a bowl, break the eggs and add the sugar, then with the help of the electric whisk start beating the mixture until it’s light and fluffy.
At this point, while continuing to use the whisk, add the liquids, then little by little the dry ingredients, making sure to slightly lower the speed when you add flour, cocoa, and baking powder, so you avoid scattering everything around.
I add the baking powder last and in just 5 minutes the batter is ready, smooth and fragrant, ready to be baked.
🔥 Baking in air fryer
At this point, all that’s left is to bake our cake! The batter will be quite fluid, so prepare an 8-inch pan, preferably springform for easier unmolding of the cake. Alternatively, a non-stick pan will do just fine.
Butter and flour it well, pour the batter inside, and level slightly.
We bake in the air fryer at 320°F for about 30 minutes. Times may vary slightly depending on the model, so I recommend always doing the toothpick test before removing: if it comes out dry, the cake is ready!

👉 I used an 8-inch pan, perfect for air fryer cooking and to get a cake tall enough, soft, and well-baked. However, if you want a taller cake, for example, to fill and decorate as a base for a birthday cake, you can use a 7-inch pan: with the same dose, the batter will be more compact in height, maintaining softness and taste.
👉 The cooking in this recipe is designed for the air fryer, ideal on hot days because it allows us to avoid using the oven.
