Homemade Pie Glaze, simple and very quick to prepare. I define it for pies because I’ve personally always used it for covering fruit pies, but obviously it can have various uses such as polishing desserts and sticking wafer sheets onto cakes.
This is a glaze that can also be consumed by celiacs. The ingredients to prepare it are only three: water, sugar, and cornstarch.
You can use it as soon as you prepare it, just let it cool for a couple of minutes. If you want to store it, you can keep it for a few days in the refrigerator in a sterile glass container with a lid.

- 3 tbsp sugar
- 1 tsp cornstarch
- drops lemon juice (a few drops)

To prepare this glaze, no tools are needed other than a small saucepan with a diameter of 4 inches.

Preparation
Preparing the pie glaze takes only a few minutes in total; between preparation and cooking, it will take a maximum of 10 minutes.
Pour almost all the water into the saucepan, keeping a little in a small coffee cup, which will be used to dissolve the cornstarch. Add all the sugar to the water with a few drops of lemon juice and bring to the stove until boiling.
While the water is on the heat, dissolve the teaspoon of cornstarch in the little water you set aside. Stir well to avoid lumps.
When the water with the sugar reaches a boil, add all the cornstarch and stir for about two minutes, you will see the glaze become opaque and slightly thick as in the photo. Your pie glaze is ready.
NOTES
Before using the glaze on fresh fruit, let it cool for a couple of minutes by pouring it into a glass, then with the help of a food brush, polish your fruit.
