Have you ever tried to prepare a plum-cake with Fruttolo? It’s a soft and stress-free breakfast treat, perfect for the whole family!
I discovered it almost by accident: I had some Fruttolo in the fridge that was about to expire (my niece is one of the few who doesn’t eat them willingly!) and I didn’t want to waste them. So I decided to use them in a simple batter, starting from the butter-free plum-cake recipe, and the result surprised me: a plum-cake with a moist and soft texture that stays good for days.
It is prepared in a few minutes with a bowl and an electric whisk, and thanks to a small trick during baking… it even has the classic “hump” from the bakery!

Ingredients
- 3 eggs
- 1 cup sugar
- 2/3 cup fruit yogurt (Fruttolo type)
- 1/2 cup vegetable oil
- 1 3/4 cups all-purpose flour
- 1/3 cup cornstarch
- vanilla flavor
- 2 teaspoons baking powder
- 1/4 teaspoon baking soda

Preparation
Start the preparation by breaking the eggs into a large bowl, add the sugar and beat with the electric whisk until you obtain a light, fluffy, and foamy mixture.
Continue to whisk with the electric whisk, adding the other ingredients one at a time in the order listed. Lastly, add the baking powder and baking soda, mixing well to incorporate them into the batter
When the batter is well combined, pour it into the loaf pan previously oiled. Bake in a preheated oven at 356°F for the first 3 minutes, then lower the temperature to 329°F and continue baking for about 50 minutes in total.
Before taking it out, always do the toothpick test: if it comes out clean, the plum-cake is ready. If the top gets too dark towards the end of baking, cover it with a sheet of aluminum foil.
NOTES
The two-stage baking, first at 356°F for 3 minutes and then lowering to 329°F, is a little trick that makes the difference: this way the initial heat helps the center of the batter rise well, forming the classic plum-cake hump… the one that feels like home and grandma’s breakfast!

Can I use another type of yogurt instead of Fruttolo?
If you don’t have Fruttolo you can use any creamy yogurt (even fruit-flavored), the important thing is that it has a thick consistency, similar to Fruttolo
Can I bake this plum-cake in an air fryer?
Yes, you can also bake it in an air fryer if you have a suitable and deep enough pan. Set the temperature to 302°F and bake for about 35-40 minutes, always doing the toothpick test.
