Ingredients

- 1 tbsp extra virgin olive oil
- 1 3/4 cups tomato pulp
- to taste salt
- to taste chili pepper (or pepper)
- 2.8 oz black olives (optional)
- A few leaves basil (or oregano or bay leaf)

Preparation
The preparation is really simple: just place the chops in a pan, drizzle the oil over all the meat, add the salt, chili pepper, tomato pulp, coarsely chopped garlic, and olives. Cover with the lid and cook over high heat. After about 7-8 minutes, turn the meat, add the basil, and continue cooking for another 7-8 minutes. The chops are ready when they are tender, the sauce has reduced, and the natural cooking fat has concentrated along the edge of the pan.
NOTES
The pork chops can also be prepared in advance and reheated before serving. It is advisable to enjoy them very hot, perhaps paired with some good fresh bread or croutons. If you don’t consume them immediately, you can store them covered in the refrigerator for a couple of days.
