Puff Pastry Mini Pizzas

The puff pastry mini pizzas are a very quick snack to prepare for great snacks and tasty aperitifs.

Preparing them really takes a few minutes, just roll out the puff pastry, top it with some good tomato, and bake for a maximum of 15 to 20 minutes.
You can easily make puff pastry at home, but you can also buy it ready-made.
If you use ready-made puff pastry, I recommend buying two packages to stack on top of each other because the mini pizzas are tastier when they are a bit thicker.
The amount of tomato to put on the puff pastry mini pizzas should not be excessive because it needs to dry during baking. The puff pastry mini pizzas are unique because they remain crispy and tasty, different from those made with pizza dough.

  • 2 packages puff pastry (bought or homemade)
  • 10.5 oz tomato pulp
  • 1 tablespoon extra virgin olive oil
  • to taste salt
  • to taste pepper
  • to taste oregano

To roll out the puff pastry, just a common rolling pin is enough, and to cut the mini pizzas, you could use the edge of a small glass or a round pastry cutter

Preparation

  • The preparation of puff pastry mini pizzas is simple and quick; just roll out the pastry, cut it, and cover it with a teaspoon of tomato, then bake and enjoy!

  • In the image, you see my daughter rolling out the puff pastry we made at home. So, if you follow the recipe with our pastry, just take the block and roll it into a large rectangle about 1/4 inch thick.
    If you buy the pastry, stack the two rectangles by slightly wetting the surface of the first to make the top one adhere, and roll them out with the rolling pin to a thickness of about 1/2 inch.
    With the round pastry cutter, cut all the mini pizzas, trying to waste as little pastry as possible, cutting them well one next to the other without leaving spaces.

  • Season the tomato pulp with salt, pepper, oregano, and oil; it should be quite tasty because the pastry base is very neutral. We also like the pulp blended on these mini pizzas, so we blend it a bit with the mixer, but this is just personal taste.
    Place the mini pizzas on oven trays covered with parchment paper and put about a teaspoon of seasoned tomato on each mini pizza. The tomato should cover almost the entire surface, leaving only a small white pastry border. It should not be excessive because the characteristic of these mini pizzas is that the tomato dries during baking.
    Bake in a preheated oven at 428°F for about 15 minutes, but after the first 10 minutes, check the cooking and, if necessary, turn the baking tray. Cooking times vary from oven to oven; if your oven tends to burn, it’s preferable to keep it around 392°F and perhaps extend the cooking by a couple of minutes.

NOTES

The pastry left over from cutting the mini pizzas can be baked as white scraps to be seasoned with a bit of salt and rosemary, making a tempting snack. If you want to make more mini pizzas, stack the scraps as best you can and re-roll the pastry to get a new sheet to cut out. I suggest stacking the scraps instead of kneading them because this way, we maintain the puffiness of the pastry.

The puff pastry mini pizzas keep well at room temperature, covered with plastic wrap, for a couple of days, but you can always reheat them for just 10 seconds in the microwave to enjoy them as freshly baked,
