Sbrisolona with Nutella

Sbrisolona with Nutella or hazelnut cream, my version with the classic shortcrust pastry filled with hazelnut cream for a delicious dessert perfect at any time of day. The shortcrust pastry recipe I propose does not require resting times in the refrigerator, but you can use it immediately.

In every bite of this fantastic dessert, we will appreciate the crunchiness of the base that perfectly matches the softness and goodness of the Nutella enriched by the crumbly crumbs on the surface, hence “sbrisolona”.

The filling can obviously be varied as you like, you can also use jam or pistachio cream.

To create the crumbled effect, just take a piece of shortcrust pastry and with well-floured hands, crumble the dough with your fingers, then use it to completely cover the cake’s surface.

The cooking is quite fast, taking about 25/30 minutes, but you always need to check that the surface is golden and even.

Ingredients

  • 2 cups all-purpose flour
  • 1 egg
  • 1/2 cup sugar
  • 1/4 teaspoon baking powder
  • 1/2 cup butter (softened)
  • to taste vanilla flavor
  • 1 1/4 cup Nutella® (or hazelnut cream)

Tools

For baking, I recommend a springform pan with a diameter of 9 to 10 inches, for larger pans you need to increase the quantities of the ingredients.

Preparation

  • The preparation of the sbrisolona begins with the preparation of the shortcrust pastry. You can knead by hand starting from a flour fountain where you put the egg, baking powder, sugar, vanilla flavor in the center and begin to incorporate the egg into the rest of the ingredients with the help of a fork. Once the egg is absorbed, add the softened butter in pieces and knead everything by hand until you obtain a homogeneous dough ball.

    If you decide to use a stand mixer, put all the ingredients together in the bowl and mix with the flat beater at low speed until all the ingredients are well combined. Then transfer the dough to the work surface and form the dough ball by hand.

  • How to properly prepare the sbrisolona cake is shown in detail in the video above. Anyway, take 3/4 of the dough and slightly roll it out with a rolling pin on a lightly floured work surface. Use this slightly rolled-out dough to cover the base of the pan you have previously buttered and floured, covering the entire base and creating a raised edge about an inch high.

    Pour all the Nutella or hazelnut cream over the base and spread it well to cover the entire surface up to the edge. With the tip of a floured fork, fold the entire edge over itself to create a beautiful crust that will prevent the cream from leaking during baking.

    With the remaining shortcrust pastry, you need to create lots of little crumbs with your fingers. To help you with this operation, it’s important to use a bit of extra flour. Create many crumbs with which you will uniformly cover the entire cream. Bake in a preheated oven at 350°F for about 25/30 minutes, or until golden.

NOTES

The sbrisolona with Nutella is great on its own or accompanied by a good hot beverage. It’s easy to transport because the cream will be soft but firm after baking, making it an ideal snack for school or the office.
