Scrambled Eggs with Mozzarella: the 5-Minute Dinner Saver

in

The scrambled eggs with mozzarella recipe is a lightning-fast dinner saver, perfect when you have very little time but still want to bring something hot, melty and super tasty to the table.
This is one of those extremely simple preparations that often come about by chance. I made it tonight for my husband with what I had in the fridge: fresh eggs and a mozzarella to finish. In a few minutes, right in the pan, a creamy, melty dish came out that is truly irresistible.
The secret is to add the mozzarella when the egg whites are just starting to set: this way it melts perfectly and wraps the eggs, creating a soft and very indulgent texture.
Served on freshly toasted crusty bread they become a simple but truly special dinner, perfect also for students, young people or those evenings when you don’t feel like cooking.
