Sea Bass with Potatoes in Air Fryer

Sea bass with potatoes cooked in the air fryer: an excellent complete and balanced main course.

Cooking in the air fryer allows us to achieve shorter cooking times compared to the oven, while still maintaining a great crispy and flavorful result.

Personally, I first cut the potatoes, transfer them to a bowl where I season them well, and then move them to the air fryer’s basket, which I cover with a specific parchment paper sheet. This allows me to get potatoes that are crispy on the outside and tender on the inside, evenly flavored.

I prefer to place the sea bass in the air fryer among the potatoes without wrapping it in parchment paper or foil, as I do in the conventional oven, because the fast cooking of the air fryer allows me to get a well-cooked fish that is still moist inside.

About halfway through cooking, I turn the fish over to ensure even cooking. Before cooking, I simply clean the sea bass, wash it well, and season it with just salt and pepper. Then, after cooking, you can adjust it with a drizzle of raw extra virgin olive oil and some lemon juice.

Ingredients

  • 5 potatoes (medium)
  • 3 cloves garlic
  • 3 tablespoons extra virgin olive oil

  • 1 sprig rosemary

Preparation

  • Peel the potatoes and wash them well under running water. Using a cutting board and a sharp knife, cut them into not-too-large cubes and place them in the glass bowl. Season the potatoes with salt, pepper, two cloves of garlic, and olive oil. Mix the potatoes well and transfer them to the fryer basket with the specific silicone baking pan.

  • The sea bass must be cleaned and washed thoroughly. You can buy it already cleaned, but if you need to clean it yourself, it will be very simple: open the bottom part of the fish with a pair of scissors and remove all the insides, then rinse it thoroughly under running water.

  • Once the fish is cleaned, season it in the pocket you have created under the belly with salt, pepper, and garlic. Place the fish among the potatoes, curving it a bit to fit well in the pan, and start cooking at 356°F for about 35 minutes.
    Halfway through cooking, turn the fish over to allow for even cooking and give the potatoes a gentle stir, being careful not to break them. After 35 minutes, the fish will definitely be cooked, and the potatoes will be beautifully golden, but if you have cut them too large, they might require a few more minutes of cooking. In that case, remove the fish and leave the potatoes to cook for the additional minutes needed.

NOTES

Once the fish is cooked, I recommend cleaning it by removing the bones and skin and presenting it on the plate as fillets with roasted potatoes on the side. If you wish, you can dress the fish with a small blend of oil, lemon, salt, and pepper.

    With this recipe, I recommend almost any type of whole fish, whether saltwater or freshwater. The important thing, to stay within the cooking times, is that they weigh about 12 to 14 oz each.
