Simple and Quick Crepes to Prepare, a classic base that can be filled sweet or savory and you can easily prepare them at home using a simple non-stick pan.
Crepes are pancakes that we can prepare in a few minutes, but they can also be made well in advance because they stay soft if wrapped in plastic wrap.
They are often filled with hazelnut cream for delicious snacks but are excellent for preparing first courses. Normally for snacks they are folded into a handkerchief shape while for first courses they are rolled like cannelloni.
When I prepare them, I usually fill them with ricotta and spinach and vary the dressing, you can prepare them plain with béchamel sauce slightly diluted with cooking cream for a more velvety effect. Another great dressing is to cover them with meat sauce and béchamel.
There are crepe makers available on the market but I assure you that with a good non-stick pan, cooking them on the stove will be very easy. These pancakes do not require a lot of fat in the batter and for cooking, just butter the pan before putting it on the fire the first time.

Ingredients
- 4 eggs

You can prepare the batter with either a manual whisk or an electric whisk, for cooking you need a 9-inch non-stick pan.

Preparation
The preparation of the crepes is very simple and quick as you can see from the video above.
Crack the eggs into a large bowl, add the pinch of salt and mix a little, add the milk and flour and mix with the whisk until you get a smooth batter. Finally, add the melted butter, mix slightly and your batter is ready for cooking.
Lightly butter the pan, it should be a very thin layer otherwise remove the excess with a napkin; it should only serve to make the pan even more non-stick but the crepes should not fry!
Place the pan on the stove and when it’s hot, proceed with one small ladle at a time to cook your crepes. I use the small ladle and it’s the right amount to get crepes that are thin enough but not too much. Follow the video to see how easy and fast cooking is. Anyway, your crepe is ready to flip when the surface is almost completely dry, and once flipped 3 or 4 seconds will be enough, and your crepe is ready.
NOTES
The crepes obtained will be soft and ideal for folding into a handkerchief or rolling into a cannelloni, they will remain soft for a couple of days if kept in the refrigerator well wrapped in plastic wrap. You can therefore prepare them in advance and have them ready for the occasion, if you serve them sweet, I recommend reheating them slightly in the microwave if kept in the refrigerator.
