Simple meringues, I called this recipe that for everyone who thinks making meringues at home is difficult.
Meringues are a great sweet made from egg whites and sugar, with no added fat and rich in protein. They are small guilty pleasures that give us immediate energy thanks to the simple sugars, satisfy our sweet tooth with just a few grams and make us feel like children again. For those who absolutely cannot consume sugar I remind you of the sugar-free meringues, a great alternative much appreciated by athletes.
To make meringues well and easily you only need two precautions: first, whip the egg whites very well, do not be in a hurry. Second, the oven must be very low, around 248–266°F. If your oven cannot hold a low temperature you can keep the door slightly open.

Ingredients
- 3.5 oz egg whites (at room temperature or 104°F (about 3 large egg whites))
- 1/2 cup granulated sugar (granulated (about 3.5 oz))
- 3/4 + 1 tbsp cup powdered sugar
- to taste lemon juice

Preparation
To prepare our meringues, first put the egg whites in the stand mixer and using the whisk at maximum speed start whipping the egg whites with the addition of a few drops of lemon juice. While the mixer is running, add the granulated sugar and the powdered sugar in several additions. Let them whip at maximum speed until, when you lift the whisk, you see that the whipped egg whites stick to it without falling off; you can see this clearly in the photo. If the egg whites are not whipped to this point the result won’t guarantee great meringues. It will take about 10 to 15 minutes to reach this consistency!
Once you have such stiff egg whites, making your meringues will be very easy: put the mixture into a piping bag fitted with a star tip and pipe the meringues directly onto a baking sheet lined with parchment paper. Once piped, bake them in a conventional oven at 248°F for about half an hour; check that they are not too colored (this depends on your oven), otherwise leave the oven door slightly open. Turn off the oven and let them cool inside the oven itself. Now your meringues are ready to be enjoyed.
NOTES
Meringues keep for a very long time if stored in lidded containers and will always be a ready dessert to present to your friends. They can become an excellent base or decoration for other desserts.
