After preparing the soft sugar-free date cookies, the ones to form into balls with a stickier dough, I decided to remake the recipe in a different version, but just as simple and genuine.
These sugar-free date cookies have a shortcrust-like texture, can be rolled out with a rolling pin and easily cut, perfect if you want neat cookies that are practical to dip or bring for breakfast.
The idea always comes from her, my little niece, for whom it is advisable to avoid sugar in the early years of life. Instead of sugar, I used blended dates once again, which make the dough naturally sweet and truly delicious.
The result? Soft, fragrant cookies that are so good I ate them for breakfast this morning… and the whole family loved them.
The dough is easily prepared in a food processor, using just a splash of hot water to blend the dates, then finished by hand on the work surface. After a short rest in the fridge, it is rolled out, cut, and baked until golden.

  • 3.5 cups all-purpose flour
  • 0.4 cups cornstarch
  • 3.5 oz butter (soft)
  • 1 tsp baking powder (leveled)

Procedure

Preparing these sugar-free date cookies is very simple and the dough is made in just a few minutes with the food processor.

  • 1 Place the pitted dates in the food processor and add the warm water. Blend until you get a soft and smooth cream.
    2 Add the egg and the soft butter in pieces, then blend again to mix the ingredients well.
    3 Add the all-purpose flour, cornstarch, and baking powder, then run the processor until you obtain a compact dough.
    4 Transfer the dough onto the lightly floured surface and quickly work it with your hands to form a smooth dough ball.
    5 Wrap it in plastic wrap and let it rest in the refrigerator for about 30 minutes.
    6 Roll out the dough with a rolling pin on the floured surface to a thickness of about ¼ inch.
    7 Cut the cookies into rectangles with a pastry cutter and place them on a baking sheet lined with parchment paper.
    8 Bake in a static oven at 350°F for about 15 minutes, until lightly golden.
    9 Let them cool completely before enjoying.
