This recipe is prepared in just a few minutes, without turning on the oven or spending too much time at the stove, and it’s perfect for a quick lunch or a colorful and balanced dinner.
The air fryer is a great ally in the kitchen, especially in the warmer months: it cooks evenly, doesn’t heat the room, and allows you to get tasty dishes with very little oil. In this recipe, fresh salmon is cooked together with zucchini, cherry tomatoes, and Tropea red onions, creating a fragrant and Mediterranean mix.
Besides being a healthy and tasty main dish, the salmon with vegetables can become a great base for other dishes: you can use it to dress pasta, a farro salad, or couscous, or serve it cold in a summer salad with arugula and avocado. It’s a versatile idea, perfect for meal prep too.

FAQ
Can I use frozen salmon instead of fresh?
Yes, but I recommend letting it thaw completely and patting it dry with paper towels before cooking, so it doesn’t release too much water. Alternatively, you can cook it for a few more minutes in the air fryer.
How can I store cooked salmon with vegetables?
You can store it in the refrigerator, in an airtight container, for up to 2 days. It’s also great cold, in a salad or shredded inside a flatbread or sandwich.
I don’t have an air fryer: can I use the oven?
Of course! Place salmon and vegetables on a baking tray lined with parchment paper, add a drizzle of oil, and bake at 350°F for about 25 minutes, until the vegetables are tender and the salmon is soft. You can also turn on the grill for the last few minutes for a more golden surface.
