Ingredients for Apple and Orange Fritters
- 1 3/4 cups all-purpose flour
- 1 egg (size M)
- 1/4 cup sugar
- 1 Golden apple
- 1 orange (juice and zest)
- Half packet baking powder (about 8g)
- peanut oil (for frying)
- powdered sugar

Preparation of Apple and Orange Fritters

Start preparing the apple and orange fritters by beating the egg and granulated sugar in a bowl: the mixture should double in volume.
Extract the juice and zest from an untreated orange.
Add them to the egg and sugar mixture, stirring gently to avoid deflating it.
Separately sift the dry ingredients (all-purpose flour and baking powder).
Add them to the rest of the batter no more than 2-3 tablespoons at a time, always gently to avoid deflating the mixture.
Separately peel and dice the apple into small cubes.
Add it to the fritter batter.
Now it’s time to fry: I used my deep fryer to keep the temperature constant at 320°F (160°C); beyond this threshold, the fritters will cook too quickly on the outside while remaining raw inside.

If you don’t have a deep fryer, you can use a thick-bottomed pot and help control the temperature with a kitchen thermometer.

With the help of a spoon, take a portion of the batter and dip it into the hot oil. Turn it after a minute to brown evenly (it will take about a couple of minutes in total).
Continue in the same way until the batter is finished.
Drain the apple and orange fritters from excess oil with absorbent paper, sprinkle with powdered sugar, and serve them hot.
