The baked feta with vegetables is an extremely simple recipe to make, a vegetarian dish as simple as it is delicious! You can customize it with the vegetables you prefer; I chose spring/summer veggies and seasoned it as you like (in my case, a vinaigrette made with apple cider vinegar).

Ingredients
- 14 oz feta
- 1 red bell pepper
- 1 yellow bell pepper
- 1 zucchini
- 1.75 oz cherry tomatoes
- 2.7 tbsp extra virgin olive oil
- 1.35 tbsp apple cider vinegar
- 1 tbsp salt
- 1 clove garlic
- black pepper
- dried oregano

Start preparing the baked feta with the vinaigrette: put all the ingredients, along with grated or pressed garlic using a garlic press, in a jar. Close the jar with a lid and shake it for a few seconds, just enough to mix all the ingredients.
Wash, dry, and cut the vegetables.
Place them in a baking tray covered with parchment paper and season them with part of the vinaigrette.
Bake in a static oven at 450°F (230°C) for 20 minutes: they just need to soften, they will continue cooking with the feta.Place some vinaigrette in a baking dish; add the feta and brush it with more vinaigrette. Add the vegetables and finish with a little dried oregano.
Bake everything in a fan oven at 390°F (200°C) for 20 minutes.
Serve the baked feta immediately.
Baked Feta with Vegetables
This recipe can be considered both a main dish and an original appetizer/starter: in this case, serve it with crostini, breadsticks, and focaccia!
