Balsamic vinegar chicken is a tasty, wholesome main course that is especially simple and quick to prepare. The chicken is seasoned with a balsamic vinegar and extra virgin olive oil emulsion and baked in the oven: the tender meat and crunchy, fragrant skin will win you over.

Ingredients

  • 1.5 lbs chicken (thighs and drumsticks)
  • 1 sprig rosemary
  • 1 tbsp dried oregano
  • 1 tsp garlic powder
  • 1.7 oz balsamic vinegar
  • 1 tbsp extra virgin olive oil
  • 2 tsps wildflower honey
  • 1 tsp mustard
  • Half tsp salt

  • Start preparing the balsamic vinegar chicken with the emulsion: put all the required ingredients in a jar and close it tightly. Shake it for a few seconds until the aqueous and oily parts combine. It is the mustard which is a natural emulsifier that will help you with this operation.

    Clean the chicken skin from any feathers using tweezers, a lighter, or a kitchen torch.

    Place the chicken in a lightly greased baking dish: I chose to use only thighs and drumsticks because they are my favorite parts, but nothing prevents you from using a whole chicken cut into parts.

    Pour the emulsion over the chicken and distribute it well using a kitchen brush.

  • Finish the preparation by seasoning the chicken with dried oregano and garlic powder.

    Also place a sprig of rosemary divided into several parts in the baking dish.

    Cook the balsamic vinegar chicken in a preheated oven in fan mode at 392°F for about 30 minutes.

    Serve it hot accompanied by your favorite side dish.

You can customize the emulsion with citrus honey instead of wildflower honey. You can also use sage or thyme in place of oregano.
