Start preparing the broccoli and feta fritters by cleaning the broccoli and cooking them either steamed or in boiling water until they become soft.
Don’t throw away the stems but use them to make PASTA WITH BROCCOLI STEM CREAM.
Mash the cooked broccoli with a fork or potato masher.Season the broccoli with salt, black pepper, and garlic powder.
Add an egg and mix with a spoon.Continue by adding the previously crumbled Greek feta with your hands into the bowl.
Finish the preparation with all-purpose flour: mix with a spoon until you get a fairly sticky dough.
Heat peanut oil in a pan: to check the temperature, you can use a kitchen thermometer or use the toothpick trick, if bubbles form around the toothpick when immersed, it means the oil is at the right temperature.
Fry the fritters in the pan, adding them a spoonful at a time; cook them for about 3 minutes per side or until they reach the desired golden color.Place the cooked fritters on a surface covered with greaseproof paper or absorbent paper to remove excess oil.
Serve the broccoli and feta fritters immediately while hot.
